Healthy and Very Tasty Lentil Soup

Ingredients (for 4 servings)

β€’ 200 gr dried lentil

β€’ 1 Onion, diced

β€’ 1 Carrot, diced

β€’ 2 Potatoes, diced

β€’ 1.3l Water

β€’ 2 Tablespoons olive oil

β€’ 3 Bay leafs

β€’ 1 Teaspoon fresh ginger, diced (optional)

β€’ Salt, pepper, garlic powder, turmeric, hot red pepper flakes, parsley, saffron, basil, to taste


1. In a large pot add the water, lentils, carrots and potatoes. When it starts boiling reduce heat to a simmer.

2. In the meantime add the onion, olive oil, bay leafs and ginger. Cook for 25-30 minutes, or until the lentils, carrots and potatoes are tender.

3. Then remove the bay leafs and add the seasonings to taste. Cook for 2 more minutes.

4. Serve while hot with bread.
