Eggplant Fries with Herbs and Olive Oil


– 1 Medium size eggplant
– 3 Eggs
– Whole wheat flour as needed
– Seasonings: chili pepper, parsley, garlic, oregano, curry, salt and pepper
– Olive oil


Cut the eggplant into strips, whisk the eggs and put the flour with the seasonings in a separate bowl.

Place a pan with olive oil on the stove and heat it up. Then roll the eggplant strips in the eggs and flour and place them in the heated pan.

Repeat until all of the eggplant strips are fried. Serve them with tomato sauce and cheese or with Greek yogurt and cucumbers.
