Vegetarian Zucchini-Carrot Burgers

The healthier option is of course to bake them in the oven, though I mostly fry them, because that makes them crispy. Here’s how to do it and enjoy them guilt-free πŸ™‚

Ingredients (for 6 servings)

β€’ 3 medium zucchini
β€’ 3 carrots
β€’ 1 egg
β€’ 3-4 tablespoons corn flour
β€’ curry, garlic powder, parsley, paprika, basil, to taste
β€’ breadcrumbs, as needed
β€’ salt and pepper, to taste
β€’ sunflower oil, to taste

Preparation:

Start with grating the vegetable. Put the grated zucchini and carrots in a clean cloth, sprinkle with 1 teaspoon salt and leave it over the sink for about 10 minutes.

After that, squeeze out as much liquid as possible from the vegetables. This is a crucial step to keep your vegetable burgers from being squishy.

Add the other ingredients and combine everything nicely. Shape the burgers and press them with your fingers and place them on a baking sheet.

Heat up the oil good, than place the burgers, leaving a little space between and fry them on each side until they are golden in color. Finally put them on kitchen paper to absorb the excess fat. Serve them with a yogurt salad or a salad of your choice.
